It’s been a very busy, but an absolutely fantastic weekend!

The feedback from the diners has been amazing – we’re still putting all the comments together but here’s one that pretty much sums it up!

“An excellent concept. The young people were delightful, confident and well informed – well done! It was a lovely setting, fab food and the staff were so friendly – can we have one of these pop up restaurants every month please?!”

We are so proud of the young people who were a part of this pop up restaurant team. They worked so hard throughout all the training sessions and their hard work paid off this weekend. They have really enjoyed the whole experience and are overwhelmed by all the positive feedback. We would like to thank our partners, East Lancashire Clinical Commissioning Group, BPRCVS (Burnley, Pendle & Rossendale Council for Voluntary Service, Ste Piling from Bally’s Bites cafe, Glen and his team from the Eagle & Child in Ramsbottom and Porcus. Without the group effort, we wouldn’t have had such a successful pop up restaurant!”

Last night, our guest suppliers were Porcus, who produce wonderful pork produce from their rare breed pigs. They held a really interesting and exciting ‘Cheese and rare breed meat’ tasting session for the young people, as a part of their ongoing training. The session was based around choosing the best wine which would complement the cheese and meat boards which we will be serving on the restaurant evenings.

The young people tasted a selection of wine and cheeses and it was explained to them how the pigs are reared and the different produce that Porcus supply. It really emphasised the difference between how a local, independent supplier produces their meat in comparison to the mass production you would buy in a supermarket.

Thanks also to our lovely hosts, Ballys Bites, with training delivered by Glen from the Eagle and Child pub in Ramsbottom. We love working on this project!

As announced in November, due to the success of last year, we are now working towards our second ‘Home’ pop up restaurant to be held on 11, 12 and 13 March.

‘Home’ is an exciting community project focused around the concept that ‘cooking begins at home’. We will be working alongside a group of local, young people to show them how to cook simple meals in their own home, as well as giving them tips on healthy eating and advice on how best to spend their weekly budget.

Funded by the NHS (and supported by our partners, Burnley, Pendle and Rossendale Council for Voluntary Service, and East Lancashire Clinical Commissioning Group) the project will comprise of cooking sessions, food tastings and visits to ‘working restaurants’. The cooking sessions will be hosted by Glen Duckett from the award winning ‘Eagle and Child’ restaurant in Ramsbottom, and taking place at Bally’s Bites, a family run, local cafe in Stacksteads, co – owned by Steve Piling.

The grand finale will culminate in the young people transforming the café into a pop up restaurant which will open for three nights only on 11, 12 and 13th March.

On each of the evenings, all diners will be asked to make a small donation towards their meal. All monies raised will be used to fund ‘kitchen packs’ for those young people that have completed the project.

We are very excited to announce that Pop Up restaurant number 2 will be taking place in early March of next year! Once again, we will be working in partnership with Bally’s Bites cafe in Stacksteads  and we are proud to have the Eagle and Child pub (in Ramsbottom) join our team.  Watch this space for more information!

Well, we’re just catching up with ourselves after a hectic but totally rewarding weekend. We’re trying to collate all the feedback and photos but here are a few more – we’re delighted to say that everyone had a brilliant time and we received such positive comments. “The pop up restaurant project was a very good idea – it was good fun. Please repeat!”

Just returned home after a very special evening. After a successful test run with friends and family last night, tonight was the first official night of the pop up restaurant and well, it was just brilliant! The group of young people worked brilliantly together – it was a real team effort all round. From the warm greeting when we arrived, to taking our orders, the delicious food, the atmosphere and banter and most importantly, seeing the young people enjoying themselves and taking a real pride in what they were doing. It was a pleasure to see them do everything they had planned out to do. There were no nerves and because of the great communication between them, Laurence, Steve and John, there was a genuine buzz throughout the night. Good luck for the rest of the weekend but if tonight is anything to go by, you won’t need it. Enjoy every minute!

Today’s the day!!! It’s the first night of our very special pop up restaurant. The young people have been working really hard to make sure everything is perfect! Big thanks to Laurence and Steve – it’s going to be a great weekend. Have a good day and see you tonight!!

Met the group of young people today who were taking part in this fantastic project – and what a lovely bunch they are!! I met them at the Eagle & Child pub in Ramsbottom – a fantastic place that helps tackle local youth unemployment through their training and employment programmes. They serve fantastic food too! The ever helpful, Glen, gave them a tour of the main restaurant, the kitchen, cellars and garden. It was a real eye opener for the group and they took all the information on board with real enthusiasm! Watching the chef and his team in particular, gave a real insight into the workings of a real kitchen. They also found some handy tips for customer service which they will be using next week at their pop up restaurant. One of the young people summed up the project so far, perfectly “We came together as a group of young people but now we are a team”. Not that’s what we’re talking about! We are all so excited for next week! If you haven’t already, contact john.greeenwood@proffittscic.com for a table. The cooking sessions are well under way and are going really well. So, we thought we’d give you a bit more detail! We have seven, local, young people taking part in this project. This week, they have been learning to cook a couple of the dishes that will feature on the menu at the pop up restaurant. Laurence has been using these as a guide to explore different styles of cooking. For example, he has been teaching them how to roast a gammon joint for the ‘mini gammon and egg’ starter. Afterwards, he has then been showing the young people how to best use the rest of the meat by cooking a carbonara. The aim is to do this with all (or most of the dishes) to show how different food can be used and adapted, using as many different cooking techniques as possible so that the young people can gain new skills and experience.

We are very excited to be visiting the Eagle and Child in Ramsbottom tomorrow to have a look round (they have a great outdoor space where they have chickens and grown their own veg and herbs!) meet some of the team and sample some of their food. As some of you many know, as they are a community based organisation, this was a perfect collaboration for our project. We shall keep you posted with news and updates!

Award winning chef teams up with young people to launch pop-up restaurant in Rossendale

‘Home’ is an exciting new community project focused around the concept that ‘cooking begins at home’. In March, Proffitts will be working alongside a group of local, young people to show them how to cook simple meals in their own home, as well as giving them tips on healthy eating and advice on how best to spend their weekly shopping budget.

Funded by the NHS, the project will comprise of cooking sessions, food tastings and visits to ‘working’ restaurants. There will also be the opportunity for the young people to complete a food hygiene course. The cooking sessions will take place over a two week period, and will be hosted by the award winning chef, Laurence Tottingham. The team will be based at a family run café in Stacksteads called ‘Bally’s Bites’, co – owned by Steve Piling.

The grand finale will culminate in a real, live, pop-up restaurant – open in March for a series of three nights only. Personal invites will be sent to friends, family and VIP’s to sample the delights and hard work of all the team involved. The menu has been created to reflect all the different cooking techniques that the group will have been taught. On each of the evenings, all diners will be asked to make a donation towards the 3 course meal. All monies raised will be used to fund ‘kitchen packs’ for those young people that have completed the project.

Director of Proffitts, Martin Proffit, says “This is a very exciting project for all involved, including our partners Burnley, Pendle and Rossendale Council for Voluntary Services, and East Lancashire Clinical Commissioning Group. We are hoping that the young people will be really enthusiastic about cooking at home for their families’.
